An intimate event venue
on Flagstaff Mountain

Greystone Castle was built in 1990. The home was designed by Melissa Malcolm-Peck and Kirk Peck, Boulder natives. The castle was used as a residence until 2019, when its door opened for a culinary summer experience.

While the Castle has historically focused on its summer pop-up series, they are now opening up their gates to host special experience, corporate events, intimate weddings, gatherings, and chef’s counter dining experiences.

The Castle also plans to open its gates during winter and invite guests to enjoy private dining in modern greenhouses, which will be placed around the expansive historic property. The castle boasts over 70 acres of mountain meadows with a picturesque backdrop for photography.

Chef Jacqueline Malcom-Peck, c0-owner of Greystone, is a graduate of Cornell University’s School of Hotel Administration (Class of 2019). She has returned to Colorado to focus on food and beverage at Greystone Castle.

Jacqueline’s first memorable interaction with food was planting raspberry bushes with her mother and feeling the connection between nature and the plant source. She was home-schooled in Boulder throughout her childhood along with her older twin sisters. Her parents are small business owners and instilled a love of learning and an entrepreneurial spirit. She studied abroad in Ireland at the Ballymaloe Cookery School where she worked firsthand with artisan craftsmen and mastered forgotten practices.

During her sophomore year, she studied abroad again at the University of Edinburgh business school. Experiences abroad have allowed her to have more compassion and respect for the individuals around her. After her time in Scotland, she took a year off to complete her mother’s twenty-year life writings and manuscripts. Her mother’s memoir, A Story of Love, was published in October 2019 by Zondervan, a division of Thomas Nelson.

Jacqueline has worked at Relais & Chateau properties in Colorado and Italy as well as three-star Michelin restaurants such as Eleven Madison Park. She feels most alive living in the moment and overcoming challenges.
